Wine manufacture
The Hilarius Pütz wine manufacture - formerly AB Wines - in Kardenakhi, a village in the Georgian wine-growing region of Kakheti, was founded and established in 2011 by the German winemaker Hilarius Pütz.
Here, wines are produced on our own vineyards using both the 8,000-year-old traditional Georgian wine-growing method in clay vessels ( Qvevris) as well as in modern stainless steel tanks with temperature-controlled fermentation.
Only the autochthonous Georgian grape varieties Saperavi, Rkatsiteli, Kisi and Khikhvi are cultivated.
The vineyards are cultivated in balance with nature, meaning no herbicides, insecticides, acaricides, mineral fertilisers and the like are used. There is also no need to irrigate the vineyards, as , using organic materials, the soil has been put in a state that allows it to store the rainfall during the winter months and slowly release it to the vines during the vegetation period. The great vegetative state of the vines confirms the success of this approach.
In addition to yield regulation, the grapes are also selected again during the harvest according to qualitative criteria.
The hand-picked grapes are transported to the winery and processed with the utmost care. Mechanical stress on the grapes during this process is avoided.
